100th POST! Some recipes...

Okay, so I have been blogging for 100 posts today! I have enjoyed telling stories, complaining, making you laugh...hopefully, venting...and boring you with my family adventures! Hopefully, you will enjoy my blog for 100 more!

So, I went to the gym today, and we got some recipes that are healthy and "taste good." Granted, I have not tried these recipes, but I was told they are good for being "healthy" from the ladies at Curves.

Grandma's Homemade Chicken Noodle Soup

3 Tbsp. Olive Oil
4-5 Cloves, Garlic Chopped
2 Onions, Chopped
4 Stalks Celery, Chopped
1 Rotisserie Chicken, Shinned, Boned and Shredded
3-4 Quarts of Chicken Broth, Canned
4 Large Carrots, Peeled and Chopped
1 Tbsp. Thyme, Dried
1 Package Frozen Grandmas Egg Noodles
Dash of Cayenne Pepper
Salt and Pepper to Taste

In a large soup pot, heat oil.
Add Garlic, Onion and Celery, and saute' 10 minutes.
Add broth, carrots, shredded chicken and thyme and bring to a boil.
Simmer until vegetables are tender, about 20 minutes.
Defrost frozen noodles according to package directions. Add noodles to broth and simmer for 10-12 minutes or until done.
Add cayenne pepper and salt/pepper to taste.

Nutritional Info per 2 cups/Serving: 200 calories, 16 carbs, 13 Protein, 7 Fat.





120 Calorie Fruit Pie (Makes 2 Pies)

1 Large Sugar Free Gelatin (strawberry or raspberry)
2 Cups Hot Water

1 Large Instant Vanilla Pudding
1 1/2 Cup Skim Milk

Fresh or Frozen Fruit (about 2 cups for each pie)

2 Graham Pie Crusts

Dissolve Gelatin in Water. Set aside.
Mix Pudding and Milk. Combine two mixtures.
Place Fruit in Pie Crust. Pour mixture over fruit.
Refrigerate to set. Top with Cool Whip.





Chocolate Yogurt Breakfast or Snack

3/4 Cup Plain Unsweetened or Vanilla (less bitter) Yogurt.
1 or 2 Scoops Chocolate Curves Protein Powder
1 Tbsp. Chocolate Sugar-Free Pudding.

Mix Together until smooth with a spoon then add a few chopped nuts for crunch (walnuts, almonds, or pecans).





7 Can Soup


1 Can Chicken Broth
1 Can Corn (rinsed)
1 Can Green Chilies
1 Can Rotel Tomatoes
1 Can Black Beans
2 Cans Chicken Breast (or 2 Cooked Chicken Breasts)
1 tsp. Cumin

Heat in Pan and Serve





Muffins

1/2 Cup Hot Water
1 Cup All Bran
1/2 Cup Rolled Oats

Soak 10 Minutes, blend.

1 Cup Nonfat Yogurt
1/2 Cup Applesauce
1 Egg

Mix all of the above with:

1 1/4 Whole Wheat Flour
1 tsp. Baking Soda
1 tsp. cinnamon
1/2 tsp. Salt
1/2 Cup Raisins

Makes 18 muffins. Bake at 400, for 12-14 minutes.





Okay, so I hope the recipes taste good! Now, I want to share a yummy Hot Chocolate recipe that I love to make this time of year. We have already made it since there has been Snow in October!

4 Cups of Milk (I use Non-Fat)
1/3 Cups Chocolate Chips
1/3 Cups Sugar

Melt all together on Stove-top. Heat through.

Then add: 1/4 tsp. Cinnamon and 1/4 tsp. Ground Nutmeg.

You don't have to add the Cinnamon or Nutmeg, but it tastes so yummy...just like a coffee shop! Top with Whipping Cream and Serve with your family on a cold day of Snow!
